In the Middle Ages, a true army of Christian monks and nuns arrived in the North from Central and Southern Europe. Some of them were vegetarians - something very new in time. The vegetarian lifestyle made it natural for these monks to grow well-stocked kitchen gardens.

Self-sufficiency with medicinal plants was also important. The monasteries ran hospitals and needed large quantities of good quality herbs.

Over 100 monasteries were built in Denmark, many of them having medicinal plant gardens. Unfortunately, none of these monastery or manor gardens have been preserved for posterity. Bogen er skrevet af den svenske urtegartner og aromaterapeut Eva Olsson og bearbejdet til dansk af krydderurtegartner Inger Vaaben. Den fortæller om lavendelens historie, dyrkning, indholdsstoffer og anvendelse og indeholder desuden opskrifter på bagværk, syltetøj, is, sukker, karameller med mere, alle med lavendel. 

Mit grønne apotek

Mit grønne apotek handler om lægeurter, dvs. planter, der kan lindre, forebygge eller måske ligefrem kurere småskavanker såsom hovedpine, forkølelse, gigt eller småsår. Blandt dem er kamille, pebermynte, aloe vera, gingko, ginseng, hvidløg, tranebær, pil, og purpursolhat, der alle har vist sig at have naturlige indholdsstoffer med gavnlige egenskaber. 

Den erfarne urteskribent Anemette Olesen har anlagt en række lægeurtehaver. I bogen beskriver hun 40 forskellige lægeurter og deres egenskaber – ­alle urter, der med held kan dyrkes indendørs, i haven eller indsamles i naturen. Nogle af de omtalte urter kan også give ekstra smag til maden. 

Mynte

Mynte har længe været kendt og elsket som krydderurt og lægeplante. I de senere år har den gastronomiske verden taget de mange nye myntesorter til sig, og i denne bog bydes indenfor i mynternes mangfoldighed. 

Inger Vaaben og Jytte Doll Nielsen, der står bag det økologiske krydderurtegartneri Nielsen & Nielsen, gennemgår mange spændende myntevariationer, man kan dyrke, de fortæller om myntens historie, giver et indblik i botanikken og kommer med gode tips til dyrkning og høst.

Kogemanden Nikolaj Kirk har skrevet forordet og udarbejdet en af de skønne mynteopskrifter, specielt til bogen, som han kalder »En gave til alle os, som holder af de skønne, duftende urter.«

Naturens spiselige frugter

I naturen vrimler det med frugter, især hen på sommeren og efteråret. I denne bog præsenterer hortonom og ivrig samler af naturens frugter, Bente Halkjær, 23 forskellige frugter – fra agern til tyttebær – der alle kan samles og bruges. Nogle velkendte, andre mere ukendte. En enkelt frugt, bukketorn (også kendt som gojibær) har længe været anset for giftig, men er nu frigivet til almindelig madbrug. 

Det nye nordiske køkken har inspireret os til atter at lære naturens planter at kende og bruge dem i maden. Og netop frugter kan alle samle, spise og konservere. I bogen finder du opskrifter på fx agernsmåkager, enebærsennep, hasselnøddecreme, varm havtornsaft med krydderier, tjørnebærgelé, abildkranse, mirabellechutney, tyttebærboller, slåen æblegelé og skovjordbærmarengs. 

Rabarber

Først omkring 1930 begyndte man at spise rabarber herhjemme. Oprindelig brugte man udelukkende planten som lægeplante, og dens historie kan spores flere tusinde år tilbage i tiden. I dag bruges den syrlige grøntsag flittigt i det meste af verden, både i det salte og det søde køkken, og der findes mere end 70 forskellige sorter.

I denne lille bog øser Inger Vaaben, indehaver af det økologiske urtegartneri Nielsen & Nielsen, ud af sin viden om den populære forårsbebuders historie, dyrkning og anvendelse. Carsten Lunding, madarkitekt og forfatter til flere bøger om smag, har bidraget med opskrifter og afsnittet om rabarbersmage.

Bogen indeholder 28 rabarberopskrifter på hhv. middagsretter, desserter, syltning, drikke og tilbehør.

Rabarber er en pocketudgave af og erstatter bogen Smagen af Rabarber, der udkom første gang i 2015.

Roser

Der findes utallige rosensorter, og der kommer hele tiden flere til. Nogle er døgnfluer, andre viser sig at kunne modstå vores klima og sygdomme. I denne bog er der lagt vægt på at beskrive de smukkeste, mest hårdføre og sunde sorter, de roser, der giver dig maksimal glæde og minimale genvordigheder. 

Landskabsarkitekt Jane Schul beskriver i bogen række gode sorter inden for de gængse rosengrupper. Nogle er kendte, andre mindre kendte men alle er anbefalelsesværdige på grund af deres smukke blomster og eller duft. Der er nok at tage af. Både inden for de botaniske, historiske og moderne rosentyper. 

Sommerfugle og blomster

Dagsommerfugle er smukke og vækker uvilkårligt beundring med deres farvepragt og elegante flugt. Vi glædes ved den første gule citronsommerfugl eller den farvestrålende dagpåfugleøje, der flakser omkring i staudebedet. Sværmere og møl ser man mindre til, fordi de først er aktive om aftenen, men også de har en egen skønhed og poesi, når først man får øjnene op for dem. 

I bogen præsenterer Susanne Harding, biolog, agronom og specialist i insektøkologi, de almindeligste sommerfuglearter i den danske natur og, ikke mindst, i vores haver. Hun beskriver sommerfuglenes interessante liv, som man selv kan opleve, bare man ved, hvad man skal kigge efter, og giver tips til hvilke planter, man med fordel kan anskaffe til haven, for at få endnu flere sommerfugle. 

Spiselige blomster 

Med det nye nordiske køkken er sket en "opblomstring" af interessen for vilde og dyrkede urter i Skandinavien, og mange dygtige kokke har kastet sig over brugen af blomster til pynt og i maden. Det smitter selvfølgelig af på os andre. Spiselige blomster er populære som aldrig før, og mange vil gerne vide, hvilke blomster de kan bruge og til hvad. 

I bogen giver den erfarne have- og madskribent Anemette Olesen sit bud på blomster, som kan plukkes og fortæres til alles velbehag. Bogen indeholder masser af gode tips og opskrifter som fx kandiseret stedmoder, sommersuppe, skovmærkesnaps og kage med natviol. 

Spiselige svampe

Det er så dejligt at gå på svampejagt i naturen, men det er ikke altid nemt at kende de spiselige og de giftige svampe fra hinanden. De nemme spisesvampe som fx kantarel, spiselig rørhat, østershat og markchampignon er til at få styr på, men andre svampe kræver hjælp og vejledning fra en svampekyndig.

Forfatter, tegner og ivrig svampejæger Peter Nielsen har haft sin gang i naturen hele sit liv. I denne bog har han tegnet og beskrevet 25 almindelige spisesvampe Hver svamp beskrives med størrelse, udseende, levested, duft, smag og forvekslingsmuligheder. Han fortæller, hvad man skal undgå, når man indsamler og tilbereder svampe, desuden indeholder bogen ni lækre svampeopskrifter. 

Spiselige vilde planter

Mange af naturens planter kan spises, og der kan nemt gå sport i at gå på jagt efter vilde planter og anvende dem i forskellige madretter. En tur i forårsskoven kan kombineres med indsamling af ramsløg, brændenælde, døvnælde, martsviol, skovmærke, skovsyre og sødskærm. Og på en forårstur til stranden kan man plukke strandarve, strandkål, strandvejbred og strandsennep. Alle planter, der er velegnede til brug i køkkenet. 

Der er virkelig mange muligheder, men det er vigtigt at kende forskel på spiselige og giftige planter. I denne bog gennemgår Anemette Olesen en række af de særligt gode planter, der anbefales til spisning, og som er nemme at finde. Planterne er illustreret med vellignende tegninger.

Bogen indeholder desuden opskrifter, fx champignonsalat med mælkebøtteblade og pære-mandel tærte med friske violer. 

Vilde bier og biplanter

Lyden af summende bier, der flyver fra blomst til blomst, er indbegrebet af forår og sommer. Bierne er vigtige bestøvere af både vilde og dyrkede planter og en væsentlig del af den biologiske mangfoldighed. De vilde bier er imidlertid gået voldsomt tilbage overalt på grund af manglende ynglesteder og egnede fødeplanter. Vi må gøre en indsats for at vende udviklingen.

Forudsætningen for at hjælpe bierne er viden om dem og deres liv. Deres naturlige levested er i naturen, men vi kan også hjælpe dem i haven eller på terrassen ved at tilbyde gode leve- og redesteder og bivenlige blomster.

I bogen fortæller Susanne Harding, biolog, agronom og specialist i insektøkologi, om de vilde biers liv og deres foretrukne planter og levesteder.

Urtete fra natur og have

Urtete drikker vi, fordi den gavner kroppen og for nydelsens skyld. Traditionen har vi overtaget efter munke. De lavede udtræk af planter med kogende vand, fordi de opdagede, at forskellige slags planteudtræk kunne lindre, helbrede eller forebygge diverse skavanker. 


En daglig kop urtete kan blive et af dagens dejlige og afstressende små øjeblikke. I bogen forklarer Anemette Olesen, hvordan man nemt selv kan samle og tørre urter, hvilke der kan bruges, og hvad de gør godt for. Og hun viser, hvordan man ved en skånsom tørring opnår, at de medicinske indholdsstoffer bevares.

Æbler

Æblet er vel nok den mest kendte frugt herhjemme, og der er rigtig mange sorter at vælge i mellem. I denne bog får du hjælp til at finde ud af, hvilke sorter, der passer til netop din have og smag.

Forfatter og hortonom Maren Korsgaard beskriver 24 velsmagende og robuste æblesorter – røde og grønne, store og små – og fortæller om smag, udseende, holdbarhed, frugtkød og sundhedsværdi.

Bogen indeholder desuden en række dejlige opskrifter med æbler – gelé, sirup, mos, chutney, kage, salat og suppe.
